INGREDIENTS:
- Strawberry- 300 gms
- Milk- 500 ml
- Fresh cream- 500 ml
- Sugar- 300 gms
- Vanilla essence- 1 tsp
- Milk powder- 1/2 cup
PROCEDURE:
- Heat milk in a vessel. Allow it to come to a boil. Now simmer the flame and let it reduce.
- Meanwhile mix milk powder in 1/2 cup of milk. Add the milk powder mix to the simmering milk.
- Add sugar to it and mix well, let it reduce to half and turn into a rich and thick mixture.
- Keep cooking the mixture till it gets the consistency of condensed milk. At this stage, check for sweetness and add more if required. We need to keep it extra sweet as strawberries are usually tangy.
- Switch off the flame and let it cool completely. It has thickened more after cooling down.
- Wash and chop strawberries into rough pieces
. - Blend it to a fine puree and set it aside.
- Take chilled cream in a bowl, whip it using an electric whip until it takes to soft peak stage.
- Now add the strawberry puree and mix gently.
- Now add vanilla essence and the condensed milk mixture to it and mix well.
- Pour this mixture in a box and freeze it overnight.
- Take the ice cream and blend it again either using an blender or an electric whip.
- Freeze it again for 3-4 hrs.
- Once ready, scoop out the deliciousness and serve it right away.
