Mango Kulfi

Moving forward with our Summer Special Series, we bring to you traditional and authentic mango kulfi. It's Summer, and summers are incomplete without mangoes. That's why we bring to you different and tasty ways of having our King of fruits, mango. Try this mangoey kulfi and let me know in the comments how it turned out.
INGREDIENTS:
*Full-fat milk- 1 ltr + 1 cup
*Khoya- 250 gms (grated)
*Milk powder- 1 cup
*Sugar- 3 cups
*Cornflour- 2 tbsp
*Mango- 2 nos
*Mango tang- 2-3 tbsp (for added flavour)
PROCEDURE: 
*Boil milk on a high flame and reduce heat when it starts boiling.
*Allow to simmer on a low flame.
*Allow it to reduce.
*Keep stirring in between.
*When the milk is reduced to 3/4 th, take lukewarm 1 cup milk and dissolve milk powder and cornflour in it.
*When its completely dissolved, add grated khoya to the same milk.
*Mix well to remove all lumps.
*Now add this to the simmering milk and mix well and continue to cook on a low flame.
*As soon as it starts to thicken, add sugar and stir until it dissolves.
*Switch off the flame and let it cool completely.
*Puree mangoes in a blender along with mango tang.
*Add the kulfi mixture to the jar of mango and blend it for 2 mins.
*You'll notice that the mixture has turned thick and creamy.
*Pour into kulfi moulds and freeze it for min 2 hrs.
*Demould and Serve right away. Enjoyyy!
