Chocolate Pastry | Bakery Style Chocolate Pastry | Eggless Chocolate Cake Recipe

Decadant chocolate sponge with my Homemade Nutella-flavoured whipped cream and grated chocolate sprinkled on top for perfection. Try this no-fail recipe of Chocolate cake and I'm sure this will become your staple recipe.

INGREDIENTS:

For The Chocolate Sponge:

  • Curd- 3/4 cup
  • Sugar- 3/4 cup
  • Oil- 1/2 cup
  • Refined flour- 1.25 cups
  • Unsweetened Cocoa powder- 1/4 cup
  • Salt- a pinch
  • Baking powder- 1 tsp
  • Baking soda- 1/4 tsp
  • Milk- 1/4 tsp

For Decoration:

  • Sugar syrup- (1cup water + 2 tbsp sugar)
  • Sweetened Whipped cream- 1 cup (chilled)
  • Homemade Nutella- 2 tbsp
  • Grated Chocolate

PROCEDURE:

For The Chocolate Sponge:

  • Preheat a kadhai with salt, let it get hot till we get the cake batter ready.
  • In a large mixing bowl, add curd and sugar, whisk it well until the sugar gets dissolved.
  • Now add oil to it. I'm using sunflower oil here, you can even use rice-bran oil too. Avoid using oils like mustard oil, or peanut oils as they have a strong smell. In short, you can use any oil which has no smell of its own.
  • Mix the oil well, till it turns to a homogenous mixture.
  • Cover it and let it rest for 10 mins.
  • Meanwhile, sift all the dry ingredients using a sieve. Mix lightly using a spatula.
  • Add half of the dry mix to the wet mix, Mix using cut and fold method. Now add rest of the ingredients, Mix gently using cut and fold method.
  • Now add milk to it and mix. Mix only until all the flour pockets have disappeared.
  • Pour this batter in a greased and lined tin and bake it for 20-25 mins on medium flame.
  • After baking let it cool down completely.
  • Cut the cake into two layers.

The Assembly

  • Drizzle sugar syrup on the cake layers evenly.
  • For the nutella-flavoured cream- add nutella to the cream while whipping. You can add more according to your preference.
  • Spread the nutella-whipped cream on the first layer, place the second layer and cover the entire cake with a thick layer of cream.
  • Refrigerate the cake for 10 mins, now level out the cake and frost the cake evenly with another layer.
  • Add grated chocolate on top.
  • Your delicious Chocolate pastry is ready. Serve chilled.
