*Zeeraga samba rice- 2 cups
*Oil- 1/2 cup
*Onion- 2 (medium sized, cut into slices)
*Tomatoes- 4 (medium sized,Chopped)
*Mixed vegetables of your choice- 2 cups
*Ginger-garlic paste- 2 tbsp
*Chopped coriander leaves- 1 tbsp
*Chopped mint leaves- 1 tbsp
*Juice of 1 lemon
*Curd- 1 cup
*Red chilli powder- 2 tsp
*Salt- to taste
*Cinnamon- 3 1'' sticks
*Green cardamom- 3 nos
*Cloves- 3 nos
*Garam masala powder- 1/4 tsp

PROCEDURE:
*Heat oil in a pressure cooker.
*Add the whole spices and fry for a minute.
*Now add chopped onions and cook till translucent.
*Add mint leaves and fry again.
*Now add ginger-garlic paste and fry for a minute.
*Add the chopped veggies, add salt and chilli powder.
*Cook on a high flame for 2 or 3 minutes.
*Add chopped tomatoes, curd, lemon juice, coriander leaves and mix well.
*Add 1 cup water and mix well.
*Pressure cook for 3 whistles.
*Set it aside.
*Take 5 cups of water in a wide vessel, add salt to taste.
*Allow it to come to a rolling boil.
*Rice should be washed and soaked for a minimum of 30 mins.
*Now drain the water and add the rice to the boiling water.
*Keep stirring once or twice.
*Cook till the rice is 70% cooked.
*Now drain in a colander.
*Take a wide bottomed vessel and pour half of the cooked veggies.
*Pour the drained rice over it.
*Now pour the remaining cooked veggies over it.
*Mix the rice and veggies gently, so that they combine.
*At the same time, take care that the rice doesn't break and also doesn't overcook.
*The last thing you would want is to eat mushy pulao in sehri, so take care to not overcook.
*Keep an old tawa on a high flame, place the pulao vessel over it, cover it with a tight lid.
*After 5 mins lower the flame.
*After 10 mins switch off the flame.
