A quick and easy Indo-chinese Recipe, Fried rice. This dish can be made in under 10 mins, and is a great lunch-box recipe. You can add veggies of your choice, and even add scrambled eggs or fried chicken to it. A great way to use leftover rice. Try this recipe and let me know how it turned out.
INGREDIENTS:
- Oil- 2 tbsp
- Garlic cloves- 3-4 nos (chopped)
- Onions- 1/2 cup (sliced)
- Carrots- 1/2 cup (fine juliennes)
- Capsicum- 1/2 cup (fine juliennes)
- You can add any veggies of your choice here
- Soya sauce- 1 tbsp
- Vinegar- 1 tbsp
- Tomato ketchup- 1 tbsp
- Salt- to taste
- Black pepper powder- 1 tsp
- Sugar- 1 tsp
- Chilli flakes- 1 tsp
- Cooked Rice- 2 cups
PROCEDURE:
- Heat oil in a kadhai, add garlic and saute till golden. Now add sliced onions and some salt and let it cook for 2 mins.
- Now add carrots and capsicum to it and saute well. Allow it to cook in it own juices while stirring in intervals.
- Now add the sauces, pepper and chilli flakes and mix well.
- Add sugar toit and mix well. Sugar balances the taste in fried rice.
- Add the cooked rice to it and toss well. Simmer it and let the rice absorb the flavours.
- Another easier method is to toss the rice well and remove it in a microwave-safe container and microwave for 5 mins. This way it will be easier and saves a lot of time.
- Veg fried rice is ready. Serve hot with Gobi Manchurian
