MEETHE DUM KE SEMIYA

 

Meethe dum ke semiya is generally a sweet dessert made from semiya (whole wheat vermicelli), ghee, dry fruits and sugar. Eid breakfast in my home is incomplete without this sweet. INGREDIENTS:






*Roasted vermicelli- 1 ½ cup

*Sugar- 1 cup

*Ghee- 2 tbsp

*Cinnamon- 1’’ stick

*Green Cardamom- 3 nos

*Raisins- 1 tbsp

*Cashewnuts- 1 tbsp (broken into pieces)

*Water- 1 ½ cup

 

PROCEDURE:

*Heat water in a vessel, allow it to boil.

*Heat ghee in a thick bottomed vessel.

*Add cashew pieces and fry till light brown, take care that it doesn’t get burnt.

*Remove the cashews from ghee and set aside.

*Add raisins to the same ghee and fry till light brown.

*Remove from ghee and setaside.

*Now add cinnamon and cardamom to the same ghee.

*When it splutters, add roasted vermicelli to it.

*Mix well such that all the vermicelli is coated in the ghee.

*Fry for 5-10 secs.

*Add the boiling water slowly to the vermicelli.

*Keep stirring continuously.

*Add water to it as much as it needs, there is no need to add all of it, adding too much water may overcook the vermicelli.

*Mix well and simmer for 2 mins.

*After 2 mins, add sugar and mix well.

*Cook for 2 mins until sugar dissolves.

*Now simmer for 2 mins again.

*Switch off the flame and add the fried dry fruits.

*Mix well and serve hot.
