Veg Manchow Noodles | Veg Noodles Recipe

A chilly evening calls for something hot yet spicy and also comforting. On such winter evenings, I prefer having this hot and spicy Manchow noodles. I have used Instant noodles here instead of normal noodles, as they cook fast. I have made it using loads of veggies, you can use any veggies of your choice, or you can add chicken or egg to it according to your preference. Noodles cooked in a spicy yet comforting manchow broth which is loaded with brown garlic and loads of veggies and seasoned with many spices and sauces. Ingredients:

  • Oil- 2 tbsp
  • Chopped garlic- 7-8 pods
  • Carrots- 1 no (finely chopped)
  • Cabbage- 1 cup (finely shredded)
  • Capsicum- 1 no (finely chopped)
  • Salt- to taste
  • Black pepper powder- 1 tsp
  • Red chilli flakes- 1 tsp
  • Green Chilli sauce- 1 tbsp
  • Soya sauce- 2 tbsp
  • Tomato ketchup- 1 tbsp
  • Vinegar- 1 tsp
  • Sugar- 1 tsp
  • Chopped coriander leaves- 2 tbsp
  • Instant noodles- 3 noodle cakes along with the tastemaker
  • Water- to cook the noodles

Procedure:

  • Heat oil in a kadhai, you can even use ghee if you prefer. Now add chopped garlic to it. Saute the garlic well. Make sure that the garlic is chopped finely. Allow the garlic to get golden. Keep sauteing.

  • Now add chopped carrots to it and sprinkle some salt over it. Saute it on high heat for a min or two.

  • Now add chopped cabbage to it and saute it for a min.

  • Similarly, add chopped capsicum to it and saute it for a min.

  • Now add water to cook the noodles to the cooking veggies. Add some more salt, tastemaker and all the spices and sauces. Check for seasoning and add more spice if needed. Allow the water to come to a boil.

  • Now add the instant noodles to the boiling broth and let it cook. Keep stirring in intervals. Add chopped coriander leaves to it.



  • Your quick and easy Veg Manchow noodles are ready. Serve hot right away.
