Bringing to you Mango Ice cream recipe which is perfect for summers and will make you instantly fall in love with it. It has the goodness of ripe mango pulp and sweet and creamy milk base which makes it melt in the mouth. A conventional Ice cream is made with eggs as the base which are churned to get a light and airy texture. But this recipe is eggless and made without the use of an Ice cream machine. Isn't it easy? INGREDIENTS:
- Milk- 500 ml
- Khoya- 200 gms
- Sugar- 1 cup (more or less depending on the sweetness of the mangoes)
- Milk powder- 2 tbsp
- Mango puree- made using 1 medium-sized ripe mango
- Mango tang- 2 tbsp
- Raisins- for garnish
PROCEDURE:
- Heat milk in a thick-bottomed vessel. Simmer it once it comes to a boil.
- Let the milk simmer for 5-6 mins, or until it reduces to half.
- The milk should reduce to half ore else you'll get icy bits while eating.
- Once the milk has reduced, add sugar and milk powder. Mix well.
- Now add grated khoya to it. Though this step is optional, I personally prefer it as it adds creaminess to it and makes it taste like store-bought ice cream.
- Mix and let the khoya dissolve in it.
- Check for sweetness and add more sugar if required. Do not add too much sugar, as ripe mangoes are naturally sweet. So, you may end up adding more sugar than required.
- If the milk reduced does'nt look thick and creamy enough, then let it reduce for 5 more mins, but make sure to keep stirring continuously.
- Now the milk base is ready.
- Remove it off flame and let it cool down completely.
- Add the mango pulp and mango tang to it. Mix well.
- Check for sweetness again. Add more powdered sugar if needed.
- Pour the creamy mix in a box with a tight lid.
- Let it freeze for 3-4 hours.
- Mango Ice cream is ready. Scoop out and dig in right away.
- Sometimes, the ice cream turns hard due to very low temperatures. Don't worry, just refrigerate it for an hour before serving and they'll be as perfect as ever.
