Chocolate Cupcakes Recipe | Eggless Chocolate Cupcakes

Isn't that quick? This is an easy microwave cupcake recipe which is equally indulgent and easy. INGREDIENTS:

  • Curd- 3/4 cup
  • Sugar- 3/4 cup
  • Oil- 1/2 cup
  • Salt- a pinch
  • Vanilla essence- 1 tsp
  • All-purpose flour- 1.25 cups
  • Baking powder- 1 tsp
  • Cocoa powder- 1/4 cup
  • Milk- 1/4 cup
  • Frosting- I've used 1/2 cup of my Homemade whipped ganache recipe (I'll share its recipe soon)

PROCEDURE:

  • Take a large mixing bowl, add sugar and curd to it.

  • Mix well until all the sugar has dissolved completely.

  • Now add oil, salt and vanilla essence to it and whisk well.

  • Whisk it well until it turns to a homogenous mixture, you'll know it's done when all the oil mixes with the cur-sugar mixture. I have used sunflower oil for this recipe, you can even use rice bran oil instead.

  • Sieve together all purpose flour and baking powder.

  • Add half of the dry ingredients to the wet mix, gently fold it in the mix.

  • Now add the remaining dry mix to the wet mix, gently fold it in.
  • Now sieve cocoa powder on it. Mix gently using a spatula. Make sure you don't over-mix.

  • Now add milk to it and give a final mix.

  • Place cupcake liners in a microwave-safe katori. Add a scoop full of batter in the liners.

  • Place four such katoris in the microwave. Microwave it for 3 mins on full power.
  • The cupcakes will be done by now, Don't over cook it as it'll get hard and dry if done so.
  • Let the cupcakes cool down completely. Brush some milk over it to retain its softness.
  • Take chocolate frosting in a piping bag with any tip of your choice.
  • Pipe out some frosting over it and decorate it as you wish. Chocolate Cupcakes are ready. Serve it right away, or even chilled. I personally prefer lukewarm chocolate cupcakes. You can relish it any way you prefer.
