Brinjal poriyal is a quick and easy sabzi recipe made up of long green brinjal, spices and aromatics. This recipe can be made in under 15 mins. INGREDIENTS:
- Brinjal- 300 gms (finely sliced, I have used long green brinjal here)
- Oil- 2 tbsp
- Mustard seeds- 1 tsp
- Curry leaves- 1 sprig
- Onion- 1 cup (sliced)
- Tomatoes- 1/2 cup (sliced)
- Salt- to taste
- Red chilli powder- 1 tsp
- Turmeric powder- 1/2 tsp
- Chopped coriander leaves- 1/2 cup
PROCEDURE:
- Heat oil in a kadhai, add mustard seeds and curry leaves to it. Allow it to splutter.
- Now add sliced onions and some salt to it and cook until translucent. This process may take 3-4 mins.
- Now add washed and sliced brinjal to it. Allow the brinjal to cook in it. This may take 4-5 mins. Keep stirring in intervals.
- Once the brinjal is half-cooked, add tomatoes and the spices to it.
- Mix gently and sprinkle some water on it, simmer it and let it cook for 3-4 mins on low flame.
- Check for seasoning and add salt and spice if needed.
- Brinjal poriyal is ready, sprinkle coriander leaves and serve hot.
