Each household has a different variation of garam masala, this is my version of garam masala which has a balance of all flavours and is perfect for all kinds of savoury dishes.

INGREDIENTS:
- Cinnamon- 1/4 cup
- Cloves- 2 tbsp
- Cardamom- 2 tbsp
- Star anise- 3-4 nos
- Bay leaf- 2 nos (large)
PROCEDURE:
- Heat a pan, once hot lower the flame. Add the spices and dry roast the spices on a low flame. Once fragrant, switch off the flame and let it cool completely.
- Roasting step increases the shelf life of the masala.
- Add the spices to a jar and grind it to a fine powder.
- Allow the powder to cool down before removing it in an air-tight jar.
- Store it in a cool and dry place. And use a dry spoon.
- This garama masala has a strong flavour unlike store-bought masalas. If your recipe calls for 1 tsp of garam masala, then use 1/4 tsp of this homemade garam masala.
- Trust me, 10 mins of effort will give you flavourful garam masala and will also save you some money.
