This masala can be used for all kinds of sabzis, dals, chicken or mutton gravies and you can be experimental and sprinkle a little on an omelette. Trust me this masala will elevate your dishes, also it's inexpensive, made with easily available ingredients, can be made in under 15 mins and can be stored upto a year at room temperature.I hope i've convinced you to make your own sabzi masala. INGREDIENTS:
For dry roast:
- Coriander seeds- 1/4 cup
- Jeera- 2 tbsp
- Black pepper powder- 1 tsp
- Fennel seeds- 1 tsp
- Methi- 1/4 tsp
- Cloves- 4-5 nos
- Cinnamon- 2 1'' sticks
- Cardamom- 3-4 nos
Other Ingredients:
- Salt- 1 tsp (more or less according to your preference)
- Red chilli powder- 1 tbsp
- Aamchur powder- 2 tbsp
- Turmeric powder- 1 tsp
- Onion powder- 1 tsp
- Garlic powder- 1/2 tsp
- Cornflour- 1 tbsp
- Sugar- 2 tsp
PROCEDURE:
- Take all the spices in a pan, roast them on a low flame until fragrant. Once fragrant, switch off the flame and let it cool completely.
- Add the roasted spices to a jar and grind it to a fine powder.
- Now add all the spice powders to it except sugar and pulse for a min till all the masalas blend with each other.
- Now add sugar to it and mix using a spoon. Don't not grind it, let it stay as crystals.
- Store the sabzi masala in an airtight container in room temperature. Use this in pulaos, sabzis, curries, etc. Its uses are endless.
