Masala Macaroni | Desi Pasta | Indian style Masala pasta

Macaroni/ elbow pasta cooked in a spicy, tomatoey gravy along with veggies. This desi version of macaroni is loved by kids and is and easy and healthy lunch-box recipe. Try this recipe for your kid's lunchbox and i'm sure they'll love it.

INGREDIENTS:

  • Macaroni- 3 cups
  • Oil- 2 tbsp
  • Cinnamon sticks- 2 1'' sticks
  • Cloves- 2 nos
  • Cardamom- 1 nos
  • Sliced onions- 1 cup
  • Ginger garlic paste- 1 tbsp
  • Mint leaves- 1/4 cup
  • Red chilli powder- 1tsp
  • Salt- to taste
  • Sliced carrots- 1/4 cup
  • Green peas- 1/4 cup
  • Tomato puree- made from 5 medium sized tomatoes
  • Garam masala- 1/2 tsp
  • Green chillies- 4-5 nos
  • Chopped coriander leaves- 1/4 cup
  • Water- to cook macaroni (Check the procedure below on water;macaroni ratio to get perfect non-sticky macaroni)

PROCEDURE:

  • Heat oil in a pressure cooker, add the whole spices to it and allow to crackle.
  • Add sliced onions and some salt to it and allow to cook till translucent.
  • Now add washed and drained mint leaves to it and fry for a min.
  • Now add ginger garlic paste and red chilli powder and fry for some time.
  • Add washed and drained veggies to it and allow to cook for some time.
  • Pour the tomato puree to it ,along with garam masala, coriander leaves and mix well.
  • Check for seasoning and add more if needed.
  • Close the pressure cooker and cook for 2 whistles, allow the pressure to release naturally.
  • Transfer the contents to a wide vessel and allow to boil.

  • How to get perfect non-sticky Macaroni?
    The ratio of water:macaroni should be 1 1/2 cups water for 1 cup macaroni. Sine we have tomato puree too so we'll add 1 1/2 cup water per cup macaroni.
  • Now add water to the masala and add some salt.
  • Allow it to come to a rolling boil.
  • Add the macaroni to it, cook it while stirring in intervals.
  • Check the spice level and add spice and salt if needed.
  • At this stage, add chopped coriander leaves and green chillies.
  • Mix well and once it reaches al-dente stage, simmer it for 5 mins.
  • Switch off the flame and let it rest for 5-10 mins.
  • Your Desi Masala Pasta or Masala Macaroni is ready.
