SPICY CHICKEN NOODLES

 

Street style simple Indo-Chinese Chicken noodles are great for a dinner or a weekend meal. Street style yet ‘healthy’ junk food recipe. Try this Desi Chicken Noodles recipe and let me know in the comments how it turned out.

INGREDIENTS:

For the Noodles:

*Noodles- 300 gms

*Salt- to taste

*Water- to boil noodles

 

For the Recipe:

*Oil- ¼ cup

*Garlic pods- 1 tbsp (finely chopped)

*Onion- 1 cup (sliced)

*Tomatoes- 1 cup (finely chopped)

*Sweet corn- ½ cup

*Capsicum- ½ cup (chopped)

*Carrot- ½ cup (chopped)

*Salt- to taste

*Shredded Chicken- 250 gms (Check notes for substitutions)

*Pepper powder- 1 tsp

*Chili flakes- 2 tsp

*Red chili powder- 1 tsp

*Jeera powder- 1 tsp

*Soya sauce- 2 tbsp

*Vinegar- 2 tbsp

*Chili sauce- 2 tbsp

*Ketchup- 2tbsp

*Mint leaves- ½ cup (finely chopped)

*Coriander leaves- ½ cup (chopped)

 


PROCEDURE:

*Boil water along with salt, let it come to a rolling boil.

*Now add the noodles and cook till the noodles are 80% cooked.

*Drain the noodles in a colander and wash it with cold water.

*Set it aside.

*Heat oil in a kadhai, add garlic to it.

*Fry for 5 secs, now add onions and cook till translucent.

*Now add all the veggies and tomatoes.

*Add salt and mix well.

*Let the veggies cook well.

*Now add the spices and the sauces and mix well.

*Now add the cooked noodles and toss well.

*Check for seasoning and add more salt or pepper if needed.

*Cover and let it absorb the spices on low flame.

*Spicy Chicken noodles are ready, serve hot.

 


NOTES:

*Authentic recipe doesn’t call for tomatoes, but I personally add it cause it adds a lot of flavor and moisture to it. Noodles made without tomatoes dry out soon and taste bland, I recommend you to add chopped tomatoes to noodles.

*I have used shredded chicken on this recipe, but alternatively you can use chicken from any leftover gravy.

Just remove the bones, shred the chicken and add it to the noodles along with the gravy. Trust me it tastes heavenly.
