Veggie Chicken Pasta

Schools have started to reopen and all we mothers want is to give kids nutritious, tasty and healthy tiffin. So here we are presenting Tasty, healthy Veggie Chicken pasta. It's healthy, filling and easy to make. Try this recipe for your kid's lunch and let me know in the comments how it turned out.


INGREDIENTS:
*Penne Pasta- 2 cups

For Marination:
*Boneless Chicken- 1 cup (bite sized pieces)
*Chilli powder- 1/2 tsp
*Salt- 1/2 tsp
*Ginger-garlic paste- 1/2 tsp
*Jeera powder- 1/2 tsp
*Lemon juice- 1 tsp

For pasta:
*Onion- 1 no (medium sized, thinly sliced)
*Garlic- 10 cloves (finely chopped)
*Carrot- 1/2 cup (cut into juliennes)
*Shredded cabbage- 1 1/2 cup
*Spring onion- 1 cup (chopped)
*Oil- 1 tbsp + 3 tbsp
*Soya sauce- 2 tbsp
*Tomato ketchup- 2 tbsp
*Vinegar- 1 tbsp
*Salt- to taste
*Chilli flakes- 1 tsp
*Black pepper powder- 1 tsp
*Maggi masala- 1 sachet
*Sugar- 1tsp

PROCEDURE:
*Take 4 cups of water in a broad vessel and add salt.
*Make sure you add salt correctly or else your pasta will be bland.
*Let the water come to a rolling boil.
*Now add pasta and let it cook on high flame till its 80% cooked.
*While the pasta is cooking, we'll cook the veggies too.
*Heat 1 tbsp oil in a large kadhai.
*Add garlic and fry till light golden
*Now add sliced onions and cook till translucent.
*Now add chopped, washed and drained veggies to it and add salt to it.
*Allow the veggies to cook till al-dente, the veggies should be cooked but not mushy.
*Now add the sauces and spices to it.
*Now check the pasta.
*The pasta should be al-dente and not fully cooked.
*Drain the pasta in a colander.
*Now add the pasta to the veggies.
*Stir gently and let it simmer for 5 mins.
*Add pasta water if required while stirring.
*Switch off the flame.
*Now let's move on to the chicken.
*Take boneless chivken pieces to a bowl and add all the ingredients listed under marination.
*Mix well and marinate for some time.
*Heat 3 tbsp oil in a pan, add chicken pieces to it and fry till crispy.
*Stir in intervals and let it cook till tender.
*Now add the chicken pieces to the pasta and stir gently.
*Your veggie chicken pasta is ready.
