STREET STYLE PANI PURI / GOLGAPPE

 One of my favorite junk food. I won't say it's healthy, I won't say its protein-rich or good for weight loss. But its the petfect cheat meal. Delicious to devour and rest assured you won't feel guilty. Let's have a dekko at the healthy version of an unhealthy snack. 

You can fry puris at home or use store-bought ones. I've used the papad fryums type which puff up when fried in hot oil.



INGREDIENTS:

For Potato Filling:

*Puris- 20 nos

*Boiled Potato- 4 nos (large)

*Grated carrot- 1/2 cup

*Onion- 2 nos (large)

*Coriander leaves- 1 cup 

*Panipuri Masala- 1 tbsp

*Zeera powder- 1 tsp

*Salt- to taste

*Red chili powder- 3/4 tsp

*Chaat masala- 1 tsp


Serving Ingredients:

*Finely chopped onion

*Grated carrot

*Sev 

*Finely chopped Coriander leaves


Ingredients For Pani :

*Water- 1/2 ltr

*Salt- to taste

*Black pepper powder- 1/2 tsp

*Chaat Masala powder- 1/2 tsp

*Zeera powder- 1/2 tsp

*Sugar- 1 tsp

*Lemon- 1 nos

*Panipuri Masala- 2 tsp

Paste Ingredients:

*Coriander leaves- 1 cup

* Mint leaves- 1 cup

*Green Chilies- 2 nos

*Sweet chutney

PROCEDURE:

Potato Filling:

*Take a large bowl and mash potatoes.

*Add chopped onions and reserve some for sprinkling.

*Add coriander leaves and grated carrot.

*Spare some for garnishing.

*Add salt, zeera powder, red chili powder, chaat masala and mix well. Set aside.


Preparing Pani:

*Make a paste of Coriander leaves, Mint leaves and green chilies.

*Dilute it with water and add the remaining ingredients and mix well.

*Check for seasoning  

*Your pani is ready. Set aside.


ASSEMBLY: 

* Take a puri and make a neat hole at the top.

*Make sure puri does not break.

*Stuff with potato mixture, sprinkle some onion and some carrot.

*Add 1/2 tsp of sweet chutney.

*Add 2 tsp of the masala pani.

*Sprinkle some sev. What are you waiting for??? Devour immediately.
