KARELE KI SABZI

 Bitter gourd sabzi also know as karele ki sabzi. A dry sabzi with bitter gourd, onion and tomato chunks is your true companion for all skin problems. This tangy, spicy sabzi is sure to make you fall for bittergourd. INGREDIENTS:

*Bitter gourd- 250 gms

*Onion- 1 nos (medium sized, finely chopped)

*Tomatoes- 2 nos (finely chopped)

*Oil- 1 tbsp

*Garlic- 1 tbsp (finely chopped)

*Salt- to taste

*Red chili powder- 3/4 tsp

*Zeera powder- 1/2 tsp 

*Sugar- 1/2 tsp

*Curry leaves- 1 sprig

*Mustard seeds- 1/4 tsp

*Coriander leaves- 1 tbsp



 INGREDIENTS:

*Wash bitter gourd well.

*Halve the gourd and deseed them.

*Cut them into 1/2inch thick semicircles.

*Take a cup of water in a pressure cooker.

*Add washed bitter gourd pieces and add salt and turmeric powder.

*Pressure cook for 2 whistles.

*Remove and drain in a colander.

*This step greatly reduces the bitterness of the bittergourd.

*Now heat oil in a kadhai.

*Add mustard seeds and crackle them.

*Now add curry leaves and allow to splutter.

*Add finely chopped onion and saute till translucent.

*Add chopped tomatoes and cook till its mushy.

*Add the remaining ingredients and mix well.

*Now add the drained bittergourd and mix well.

*Check foe seasoning and add salt and red chili powder if required.

*Evaporate excess liquid. Bittergourd tastes best when dry.

*Sprinkle coriander leaves and serve hot.

*Tastes equally good with hot rice, dal and ghee or with rotis.
