INGREDIENTS:
*Tomatoes- 1 kg
*Onions-2 nos
*Coriander leaves- 1 tbsp
*Cooking oil- 1 tbsp
*Mustard seeds- 1/4 tsp
*Curry leaves- 1 sprig
*Red chili powder- 1 tsp
*Ginger garlic paste- 1/2 tsp
*Salt- to taste
PROCEDURE:
*Wash tomatoes well and allow to drain.
*Chop tomatoes finely and add it to a pressure cooker.
*Add salt and pressure cook for 3 whistles.
*The tomatoes might have turned mushy by now.
*Keep the cooker on flame again and evaporate the excess water.
*Heat oil in a kadhai.
*Add mustard seeds and curry leaves, allow to crackle.
*Add chopped onions and ginger garlic paste and saute till translucent.
*Now add red chili powder and mix well.
*Now add the mushy tomatoes.
*The tomatoes should cook well in the onion mixture and not be watery.
*Let the chutney thicken.
*Check for seasoning.
*Lastly, sprinkle chopped coriander leaves and serve hot.
*Tastes equally good even the next day.
*Pair it with hot rice, khichdi and even roti
