MEETHA ZARDA CHAWAL



INGREDIENTS:

*Basmati rice- 500 gms

*Sugar- 300 gms

*Cashewnuts- 12 [broken into pieces]

*Raisins- 10-15

*Dalchini- 2  1” sticks

*Green cardamom- 4

*Yellow food colour

*Ghee- 1 ½ cup

 

PROCEDURE:

*Wash the rice thoroughly and soak for 15 mins.

*Heat a non- stick vessel and add ghee to it.

*Fry cashewnuts and raisins till light golden- brown.

*Alternatively, in another pan keep water to boil [3.5 cups approx.]

*In the same ghee, add dalchini and cardamom.

*Now add the boiling water.

*Add rice to the boiling water and allow to cook.

*Take care that the rice should be al- dente.

*Add 2-3 drops of food colour.

*Simmer the cooked rice for 3-4 mins.

*Now add sugar and mix gently. Take care to not break the rice.

*Keep the flame to the lowest possible and allow the sugar to melt.

*Allow to rest for 10 mins.

*Garnish with dry fruits and serve hot.
