Double Chocolate Cupcakes
I love baking, especially cupcakes and muffins. They are quick, simple and easy. Just dump your ingredients in a bowl, whip it up and bake them, voila it's ready and made within 10 mins. This recipe doesn't have any complicated steps hence making it quick and a repeater recipe. You can get creative and add nuts of your choice or devour as it is. INGREDIENTS:
- Curd- 3/4 cup
- Sugar- 1/2 cup
- Vanilla essence- 1 tsp
- Oil- 1/2 cup (any neutral flavoured oil will do, I've used sunflower oil here)
- All purpose flour- 1 1/4 cups
- Cocoa powder- 1/2 cup
- Baking powder- 1 tsp
- Baking Soda- 1/2 tsp
- Milk- 1/2 cup
- A pinch of salt
- Dark chocolate chips
PROCEDURE:
- Take sugar and curd in a bowl. Make sure that the curd is at room temperature.
- Whisk it together until the sugar dissolves completely.
- Now add oil to it. Most people tend to use butter here and cream it along with sugar. But personally, I prefer cakes and cupcake made with oil rather than with butter as the former comes out extremely moist and batter is made easily when you use oil in it.
- Mix the oil with the curd mix until it gets a shiny and smooth consistency.
- Now sieve together all the dry ingredients.
- Add half of the dry mix to the wet mix and gently fold.
- Once it is combined, add the rest of the dry mix and fold gently.
- Fold until just combined and all the flour pockets have disappeared. Do not overmix the batter as it'll yield dense Cupcakes.
- Add a bit of milk just to thin out the batter a little bit. You can continue as it is, but I prefer it this way.
- Pour them into cupcake liners, you can even use ramekins too, or a mug would do too, as a mug cake. Sprinkle a lot of chocolate chips on top, you can even add them to the batter as well.
- Now we have many options for baking them. One is microwave which takes literal 3 mins and its done. Simply pop them in the microwave and they'll be done in 3 or 4 mins depending on the voltage of the microwave.
- Secondly, you can make a diy oven setup on a stove. Add salt to a wide yet deep pan. Let it preheat. Place a stand and then a thali on it. Your diy oven is ready. Place your cupcake moulds on the thali and bake them for 15-20 mins and they're done. Using this diy oven, you can make buns, cookies, cakes, pizzas and a lot more.
- Your Double Chocolate Cupcakes are ready. Devour them right away, as the gooey
chocolate on top tastes heavenly along with the hot Cupcakes.
