Today I'll be sharing the recipe of Chicken Resha Kabab... a crispy yet tender kabab, in which resha translates to shredded, so basically it's a kabab which has shredded chicken in it. Marinated and cooked chicken is shredded and added along with boiled and mashed potatoes along with aromatics and herbs, which is later shallow fried to give the most perfect crisp along with being moist on the inside. You can make the mixture and freeze it and thaw while using or even shape them and freeze and can fry it directly on hot tawa along with ghee or oil. You can use this kabab as a patty for your chicken burgers or sandwiches, not just for your evening snack, but these kababs can be an excellent starter for your parties or starters for Eid too. This recipe is super customisable too, you can add grated cheese if you prefer, chopped bell peppers, caramalised onions, grated carrots or even substitute mashed potatoes with mashed sweet potatoes for a healthier version. The variations are endless. You can use your creativity and make it the way you like. So, this is my version of this kabab. Hope you like it. Ingredients:
For the marinade:
Boneless chicken chunks- 250 gms
Salt- to taste
Red chilli powder- 1 tsp
Jeera powder- 1/2 tsp
Chicken masala- 2 tbsp
Ginger garlic paste- 1 tbsp
Kasuri methi- 1/2 tsp
For the kabab:
Boiled mashed potatoes- 2 nos (medium sized)
Chopped coriander leaves + chopped mint leaves- 1 cup
Cornflour- 1/4 cup
Chilli flakes- 1 tsp
Garlic powder- 1 tsp
Onion powder- 1 tsp
Black pepper powder- 1 tsp
Chaat masala- 1 tsp
Maggi masala- 1 tsp
Oil or ghee+ for shallow frying
Procedure:
Take washed and cleaned chicken in a bowl. Add all the spices listed under the marinade section.
Mix well and let it marinate for 2-3 hrs or overnight if you have time.
Heat some oil in a tawa. I generally drizzle a bit oil and then add more if needed. Place the chicken pieces on it one by one
.
Let it cook on both sides until done. This might take 3-4 mins on each side. You don't have to cook it till crispy as we'll anyways shred them, so cook it until the chicken is done.
Let the chicken cool down for atleast 10-15 mins. Now shred them finely using a fork, or you can even do it by your hand which is much easier. Most recipes on the internet suggest pulsing the cooked chicken in a chopper to make it easier. But, I personally prefer shredding it as that's when you get the resha (shreds) of chicken, pulsing the chicken will give it a pastey consistency which makes the kebabs taste weird in my opinion.
Take a bowl, add mashed potatoes, shredded chicken, all the spices and herbs to it.
Mix well and apply some oil to it and knead it well. This process will make the kebabs velvety from the inside yet crispy on the outside.
The kabab mixture is ready. Cover and let it rest for 10 mins.
Now shape them into medium-sized kababs. You can even shape them on a stick as per your preferences.
Heat some oil in a tawa, you can even fry using ghee as it intensifies and enhances the flavour. Place the kababs on the hot tawa and fry them on both sides till crispy and golden.
Your Chicken resha kababs are ready. Serve them right away along with ketchup or dip of your choice.
For meal prep you can shape the kababs and freeze them and thaw and fry them for iftar or whenever needed. This makes the task much easier.
