Appe are small pancakes made with fermented rice and lentil batter (typically a dosa batter), traditionally cooked in a special appe pan with multiple round moulds. In this blog, I have stuffed aloo masala (palya) in these appe while cooking. Check out the step-by-step picture instructions and do try it out. INGREDIENTS:
Dosa Batter- 2 cups (Click on the link below for the batter recipe:Dosa Batter Recipe )
Finely chopped onion- 1/2 cup
Coriander leaves- 2 tbsp (finely chopped)
Red chilli powder- 1 tsp
Salt- to taste
Oil- for frying the appe
Aloo Masala- 1 cup (I have posted the recipe of Aloo Palya earlier, check the recipe here: Aloo Palya Recipe )
PROCEDURE:
Take chopped onion, chopped coriander leaves, salt and red chilli powder in a bowl. You can even add chopped green chillies if you prefer it spicy. Mix well and set it aside.
Now add the dosa batter to the spiced onion mix. Mix well and add more seasoning if needed.
Take the appe pan and grease it. Nowadays, non-stick appe pans are available. However, I prefer using traditional cast iron appe pan which are seasoned well and yield a good crisp to the appe.
Pour a tsp of the batter and place a small ball of the aloo palya on it and pour another tsp of the batter. Repeat the same with all the appe.
Drizzle some oil over it and let them cook and get crispy for a min.
Now using a spoon try to flip the appe gently. The appe will usually come out easily if your pan is seasoned well.
Once flipped, let it cook well even on the other side. This too takes a min or two.
Your delicious and crispy Aloo stuffed Appe are ready. Serve it right away along with Coconut chutney.
This easy South-Indian dish is super customisable. You can add chopped veggies in the batter itself to make it extra healthy and fibre-rich. You can even add spices of your choice too, or just enjoy simple plain appe with chutney and sambar. The variations are endless.
