For Idlis:
INGREDIENTS:
*Raw rice- 2 cups
*Urad dal- 3/4 cup
*Cooked Rice- 2 cups
*Cooking soda- 1/2 tsp
*Salt- 1 tsp
*For Saffron coloured Idlis- 1/2 cup carrot puree
*For Green coloured Idlis- 1/2 cup palak puree
PROCEDURE:
*Soak urad dal and rice after washing them. Soak them for a min. of 3 hours.
*Soak them in the morning and grind it by afternoon. So that the batter is fermented and ready to use the next morning.
*After soaking, grind the urad dal to a fine paste, by adding a little water. Make sure that you don't add too much water.
*Remove it in a vessel, the vessel should be big enough to hold the batter which rises overnight.
*Now, in the same jar add 1 part soaked rice and 1 part cooked rice, add a little water and grind coarsely.
*Add it to the same vessel. Grind the remaining rice the same way.
*Mix the batter well using washed and clean hand.
*Cover it and place in a hot place, mostly next to the stove.
*Let it ferment for a min. of 6 hrs in hot climate and 10-12 hrs in cold climate.
*Next morning, you'll notice that the batter has risen beautifully.
*Dissolve salt and soda in 1/2 cup water and add it to the batter. Mix well and the batter with foam up and get light after this step.
*Remove 2 cups of the batter in two different bowls.
*Add carrot puree to one bowl and mix well.
*Add palak puree to the second bowl and mix well.
*Take the mini idli plates and grease them with some oil.
*Take a teaspoon and fill the cavity with the batter.
*Now heat the idli steamer with a glass of water, and when the water starts to boil place the idli plates inside it.
*Cover it with a lid and allow to steam for 10 mins.
*After 10 mins switch off the flame and remove the plates from the steamer and let it cool for 5 mins.
*Remove the idlis using a wet spoon.
*Your Fluffy Tricolour Idlis are ready, Serve hot with Coconut chutney and sambar.
