SUBZI PULAO GOSHT
The name says it all, this dish is simply Veggies and mutton in a
pulao. Sounds interesting, right? Let’s dig into the recipe.
INGREDIENTS:
*Oil- 2 tbsp
*Cardamom- 2 nos
*Cinnamon- 2 1’’ sticks
*Cloves- 2 nos
*Onion- 2 nos (medium sized, finely sliced)
*Ginger garlic paste- 1 tbsp
*Tomatoes- 2 nos (medium sized, finely chopped)
*Salt- to taste
*Red chili powder- 1 tsp
*Garam masala- ½ tsp
*Shredded mutton- 1 cup
*Chopped Caroot- ¼ cup
*Chopped beans- ¼ cup
*Kidney beans- 2 tbsp
*Green peas- 2 tbsp
*Chopped potato- ¼ cup
*Chopped coriander leaves- 2 tbsp
*Chopped mint leaves- 2 tbsp
*Zeeraga samba rice- 2 cups
*Water- 3 ½ cups
PROCEDURE:
*Wash the rice thoroughly and let it soak for 1 hour.
*Heat oil in a pressure cooker, add cardamom, cinnamon and cloves to
it.
*When the spices crackle, add sliced onions and some salt.
*Saute till the onions turn translucent.
*Now add ginger garlic paste and stir fry for for 10-15 secs.
*Now add all the veggies and meat.
*Stir fry for 5 mins.
*Now add the rest of the ingredients except for rice.
*Let the water come to a rolling boil, check for seasoning and add salt
and chili powder if needed.
*Now add drained rice to the water.
*Pressure cook the rice for about 2 whistles.
*Let the pressure release naturally.
*Let it be on dum for a few minutes.
*Sabzi Pulao gosht is ready. Serve hot.
