Mutton Tikka Dum Biryani

 If you're bored of the regular biryanis, we have Mutton Tikka Dum Biryani recipe for you. This biryani is quite different from the regular biryani recipes. In the authentic way, we cook marinated mutton along withe spices, but for this recipe we first need to make mutton tikkas, the make the gravy along with the aromatic rice. Though this recipe is a bit elaborate, but trust me when I say this, It's one of the best biryanis you'll ever eat. For more such recipes, stay tuned. 

INGREDIENTS:

For Mutton Tikka:

*Boneless mutton pieces- 500 gms (Cleaned, washed and drained in a colander)

*Salt- to taste

*Red chilli powder- 1 tsp

*Jeera powder- 1 tsp

*Chaat masala- 1 tsp

*Juice of 1 lemon

*Kabab masala- 2 tsp

*Black pepper powder- 1 tsp

*Ginger- garlic paste- 1 tbsp

*Raw papaya paste- 1 tbsp

*Kasuri methi- 1 tsp (crushed)

*Oil- 2-3 tbsp (for shallow frying)


For the Biryani gravy (AQNI):

*Oil- 1/4cup

*Cinnamon- 2 1'' sticks

*Cardamom- 2-3 nos

*Cloves- 2-3 nos

*Tej patta- 2 nos

*Chopped carrots- 1 cup (optional)

*Chopped potato- 1 cup (optional)

*Tomatoes- 2 nos (chopped)

*Dum Biryani Masala- 2 tbsp

*Salt- to taste

*Red chilli powder- 1 tsp (more or less according to your taste)

*Green chillies- 5-7 nos


For Boiling Rice:

*Zeeraga samba rice- 500 gms

*Salt- to taste

*Water- to boil rice

*Jeera- 1 tsp

*Saunf- 1/2 tsp

*Tej patta- 2 nos

*Black peppercorns- 5-6 nos


For Layering:

*Fried onion/ Barista- 1 cup

*Chopped coriander leaves- 1/2 cup

*Chopped mint leaves- 1/2 cup

*Yellow food colour dissolved in 1/4 cup milk


PROCEDURE:

For the Mutton:

*Take a large mixing bowl, add the drained mutton to it.

*Add all the ingredients listed except oil.

*Mix well and allow to marinate for atleast 2-3 hrs.

*Heat oil in a tawa, shallow fry the mutton until crispy and tender.

*Set aside.


For the masala (aqni):

*Heat oil in a thick-bottomed vessel.

*Add whole spices to it and allow to splutter.

*Now add the chopped potato and carrots to it.

*Add salt to it and saute for 2-3 mins.

*Add chopped tomatoes to it.

*Sprinkle some water over it and allow the tomatoes to cook.

*Add red chilli powder, biryani masala and mix well.

*Simmer the gravy for atleast 10 mins.


For the Aromatic Rice:

*Heat a large vessel.

*Add sufficient water to boil the rice.

*Add the whole spices to the water and allow it to come to a rolling boil.

*Add salt to it.

*Drain the washed and soaked rice and add it to the boiling water.

*Allow it to cook, while stirring occasionally.

*Keep checking the rice, and when it's almost 80% cooked, drain the water carefully.

*Drain the water completely, making sure there's no water left.


The Layering:

*Take a thick-bottomed vessel.

*Spread a layer of the aromatic rice on it.

*Now sprinkle fried onions, chopped greens and pour a little of the yellow milk.

*Now spread a thin layer of aqni over it.

*Place a few pieces of Mutton tikka kabab over it evenly. 

*Repeat the same layers 2-3 times.

*Now place kabab over it.

*Now place a thin layer of riec.

*Sprinkle chopped greens and barista over it. 

*Sprinkle the leftover yellow milk over it.

*Cover it with a tight fitting lid.

*Place an old tawa over flame and place the biryani vessel on it.

*Let it dum on medium flame for 10 mins.

*Simmer the flame and allow to dum for 10-15 mins.

*Switch off the flame and allow to rest for 5-10 mins.

*Mutton tikka dum biryani is ready. Serve hot along with Dahi ki Chutney
