Happy Chocolate Cake

 Yes, you read it right. No doubt that we all get happy while eating a cake, but this cake is called happy cause it's made using Happy Happy biscuits. I was skeptical using a new brand, but the cake turned out surprisingly amazing. I covered the cake in chocolate ganache and my all-time favourite Rainbow Sprinkles. Try this unique cake and let me know in the comments how it turned out.



INGREDIENTS:

*Happy-Happy bisuits- 20 nos

*Baking Powder- 1 tsp

*Powdered sugar- 2 tbsp

*Milk- 1 cup

*CHOCOLATE GANACHE - 1 cup

*Rainbow Sprinkles- to decorate


PROCEDURE:

*Grind the biscuits to a fine powder.

*In a large mixing bowl, add the biscuit powder, baking powder and powdered sugar.

*Mix well and add milk.

*Mix using cut and fold method.

*Don't Overmix as the cake gets dense.

*Pour the cake batter in a greased and lined mould.

*Tap to remove air bubbles.


*Bake this cake in a preheated kadhai for about 25 mins or until a toothpick inserted comes out clean

*Once baked, Cover the cake with a clean cloth and let it cool completely.

*Demould the cake when cooled completely.

*Sprinkle sugar syrup on the cake to moisten it.

*Spread the  CHOCOLATE GANACHE over it and cover the entire cake with it.

*Decorate it with Rainbow Sprinkles and serve chilled.
