INGREDIENTS:
For the white sauce:
*Butter- 1 tbsp
*Maida- 1 tbsp
*Milk- 1 cup
*Salt-to taste
For the Veggies stir-fry:
*Oil- 1 tsp
*Onion- ½ cup (finely chopped)
*Sweet corn kernels- ¼ cup
*Capsicum- ¼ cup (finely chopped)
*Salt- to taste
*Crushed black pepper- ½ tsp
*Chilli flakes- 1 tsp
*Maggi- 2 cubes
*Water- enough required to cook maggi
PROCEDURE:
*Heat a pan, add butter and let it melt on a low flame.
*Now add maida and mix well breaking lumps if any.
*Roast on low flame for some seconds, don’t let it change colour.
*Add milk and mix well and break the lumps.
*As the sauce cooks, it thickens and let it simmer for some time and
add salt. Now switch off the flame.
*Set the sauce aside.
*Heat a kadhai, add oil and after it heats up add chopped onion.
*Stir for a while and add corn and capsicum, stir well and add salt.
*Now add crushed black pepper and chilli flakes.
*Do not overcook the veggies, crunchy veggies suite this dish best.
*Now add the prepared white sauce and mix well.
*Now pour water to it, keeping in mind that the sauce already has milk.
*I generally add ½ cup water to 1 cube maggi, so that I can add more if
required. You can add more or less water according to your preference.
*When the water comes to a boil, add maggi cubes and let it cook.
*You can add grated cheese at this stage if you want.
*When the maggi is 90% done, switch off the flame and cover the kadhai
and let it rest for 2 mins.
*Creamy White sauce maggi is ready, serve hot.
