MANGO ROSE CAKE

 

What’s more pleasing than a slice of fresh mango cake in these sultry summers. We bring to you the recipe of moist mango cake with whipped cream, covered with mango glaze and topped with mango rose. INGREDIENTS:

For the cake sponge:

*Cubbed mangoes- 1 cup

*Sugar- ¾ cup

*Oil- ½ cup

*Lemon juice- 1 tsp

*Yellow food colour- ½ tsp

*Maida- 2 cups

*Baking powder- 1 tsp

*Baking soda- ¼ tsp

*Salt- ¼ tsp

*Milk- ¼ cup

 

For Mango Glaze:

*Mango Puree- 1 cup

*Sugar- ½ cup

*Water- ½ cup

*Cornflour- 1 tbsp

 

Assembly:

*Whipped cream- ½ cup

*Mangoes- 2 medium sized (For Mango Rose)

 


INSTRUCTIONS:

For the Cake Sponge:

*Take a mixer jar, add cubbed mangoes and sugar. Blend it to a smooth chunk-free puree.

*Remove the puree in a mixing bowl.

*To this, add oil, lemon juice and food colour. Whisk well to mix completely.

*In another bowl, sieve together flour, baking powder, baking soda and salt.

*Fold the dry into the wet mixture gently using cut and fold method. Take care to not overmix the batter.

*Gradually add milk and make a smooth batter.

*Pour this batter in a greased and lined tin.

*Place this tin in a preheated kadhai and bake for 25 mins on low flame.

*Check with a skewer if it's done.

*Cover the cake with a clean cotton cloth and let it cool completely.

 


For the Mango glaze:

*In a saucepan, add mango puree, sugar and water. Mix well to dissolve.

*Switch on the flame and cook for 5 mins or until it starts to thicken.

*Now add cornflour slurry (1 Tbsp corn flour+ 2 tbsp water) to it.

*Cook for 2-3 mins stirring continuously until it starts to thicken.

*Switch of the flame and let it cool.

 

For the mango rose:

*Peel mangoes and slice them into paper-thin slices.

*Refrigerate until further use.

The Assembly:

*Divide the cake into two layers.

*Brush the layers with some sugar syrup.

*Place the 1st layer on the board and apply a layer of whipped cream on the cake, now place the 2nd layer cake.

*Cover the cake with a layer of whipped cream, scrape the sides smooth.

*Pour the cooled mango glaze on the cake, it should cover all the sides.

*Refrigerate the cake for 1 hour.

*Now start placing the mango thin slices with little overlap.

*Start from the outer most layer going inside with some overlap with the help of a knife.

*Your moist and tasty mango rose cake is ready. Enjoy!
