Mango Pudding Without Gelatin

 

A creamy, smooth pudding with melt-in mouth texture. A perfect dessert for a fancy dinner. This recipe uses no gelatin or agar-agar and made using very few ingredients. Try this recipe and let me know in the comments how it turned out.


 

INGREDIENTS:

*Mango- 1 (medium sized)

*Sugar- 4 tbsp

*Water- 1 cup

*Milk-  ½ cup

*Custard powder- 2 tbsp

(Check notes below for substitutions)

 


PROCEDURE:

*Peel and chop mango and add it to a blender jar.

*Add water and sugar to it and blend it to a smooth puree.

*Add this puree to a sauce-pan and switch on the flame.

*Cook this mixture till it reaches a light bubbly consistency.

*Meanwhile, dissolve Custard powder in milk.

*Pour this milk in the mango mixture.

*Cook this mixture for 3-4 mins stirring continuously.

*The mixture should be thick enough, slight pudding consistency.

*Pour in greased moulds and tap to remove air bubbles.

*Let it cool and refrigerate for 3-4 hrs.

*De-mould the pudding and garnish it the way you want.

*Serve chilled and enjoy!

 

NOTES:

*Use any Mango of your choice, but use only pulpy and ripe Mangoes.

*You can substitute Corn-flour for Custard powder.

*You can even make plain Mango puree and later add sugar and water while cooking. But blending Mango along with sugar and water will make cooking process faster.
