It's mango season and we’re just obsessed with it. Incorporating mangoes to my favorite sweets
is just my new normal. So, moving on to our Mango Delight series … we bring to
you Mango Burfi recipe. The best part is that it doesn’t require condensed milk
or any fancy ingredients.
INGREDIENTS:
*Mango- 1 (medium sized)
*Sugar- 1/3 cup
*Bread crumbs- ¼ cup
*Milk- ½ cup (boiled and cooled)
*Milk Powder- ¼ cup
*Grated coconut- 1/3 cup
*Cardamom powder- ½ tsp
*Ghee- 2 tbsp
PROCEDURE:
*Roast grated coconut on low flame for 2 mins until it slightly changes
it's colour.
*Remove from flame and set aside.
*Now peel and chop mangoes and blend it with sugar to a fine puree.
*Heat a non-stick pan and add a tsp of ghee.
*Then pour milk and add milk powder to it.
*Mix well to break all the lumps, to make a lump-free mixture.
*Now add the mango-sugar mixture and mix well.
*Cook for 4-5 mins stirring continuously.
*Add cardamom powder, some ghee and mix well. Cook for another 2 mins.
*Now add bread crumbs and roasted coconut, keep stirring until the
mixture is well incorporated.
*Keep cooking the mixture, while adding ghee. This enables the mixture
to leave the sides quickly.
*You will notice that the mixture has started to thicken, cook till it
reaches a thicker consistency than halwa.
*Place the mixture in a greased plate, be careful it's hot.
*With the help of a greased hand, shape it in a levelled square shape.
*You can dry fruits at this stage or even apply silver vark to it.
*Place it in the refrigerator for about 2-3 hrs.
*Cut into cubes with the help of a greased knife.
*Mango Burfi is ready. Enjoy!
