Hey! Welcome back to our Cake Bake Series, where we bring to you simple, yet classic Cake recipes which can be made easily at home and even without and oven. You'll find both eggless and cake with egg recipes on my blog. Do check it out. Today, I'm sharing with you Orange and Raisin Cake. A simple cake batter is made and then chopped raisins and a lot of lemon zest it added to it, when makes it tasty and also adds a lot of freshness to your cake. The cake is then topped with whipped cream. Also, let me tell you that this cake is eggless, and made using whole wheat flour, which makes it healthier. Check out the recipe below and do try it out. Ingredients:
- Sugar- 3/4 cup
- Fresh curd (dahi)- 1 cup
- Oil- 1/2 cup
- Vanilla essence- 1 tsp
- chopped raisins- 2-3 tbsp (Add as many as you like, and you can even add whole raisins. I prefer chopping them)
- Tutti frutti- 2 tbsp
- Orange zest- 2 tbsp
- Whole Wheat flour- 1 1/2 cups
- Baking powder- 1 tsp
- Baking soda- 1/4 tsp
- Fresh Orange juice- as required to make the batter
Procedure:
- Take a large mixing bowl. Add sugar and curd to it
. - Whisk the mixture and until the sugar dissolves completely. This process brings aeration in the batter and makes the cake soft and fluffy.
- Now add cooking oil to it. You can use any flavourless, odourless oil here. Avoid using oils with strong smell like mustard oil. For this recipe, I have used Rice bran oil.
- Mix well for 3-4 mins or until the oil has completely incorporated in the curd mixture.
- Seive together flour, baking powder, and baking soda.
- Add half of the dry mix to the wet mix and gently incorporate using a spatula.
- Now add rest of the dry mix and fold it in gently. Stop mixing once all the flour pockets have disappeared.
- Coat raisins, orange zest, and tutti frutti in 2 tbsp flour.
Add it to the batter and fold gently.
- Now add 2/4 cup fresh orange juice to the batter and mix well. You can 2-3 tbsp more juice, if the batter looks dry. Mix gently.
- Pour the batter in a greased and lined baking mould. Tap to remove air bubbles.
- Bale this cake in a preheated kadhai for 20-25 mins. You can even microwave this cake for 3 mins and it'll be done.
- Once the toothpick inserted comes out clean, let the cake cool down completely.
- Drizzle sugar syrup over the cake and let it moisten.
- Now spread a generous layer of sweetened whipped cream over it. Your can decorate the cale as you desire. Refrigerate the cak e for an hour atleast before serving.
- Cut into slices and serve chilled. Your Raisin and orange cake is ready.
