Veal kabab! Every Bangaloreans favourite street food. Veal kabab is tender meat marinated in flavourful masalas and then fried to perfection. Served along with sliced onions, lemon wedges and semiya (Idiyappam). This iconic street food is loved by all. Have you ever tried making it at home. Well! after a lot of trials and errors, I have come up with a recipe which tastes exactly like the street-style veal kabab and is healthier too, as I cut out all the fat from the meat. INGREDIENTS:
- Mutton- 500 gms
- Salt- to taste
- Red chilli powder- 2 tsp
- Red chicken masala- 2 tbsp
- Mutton masala- 2 tbsp
- Cornflour- 1/2 cup
- Juice of 2 lemons
- Black pepper powder- 1 tsp
- Oil- for frying
PROCEDURE:
- For this recipe, you'll need 500 gms of boneless mutton. Make sure to remove all the fat from it. Street-style veal kabab has fat in it, but we are making it healthy, so we'll remove all of it.
- Wash and clean the mutton. Let it drain in a colander.
- Now add the mutton to a pressure cooker along with salt and red chilli powder and 1/2 cup of water. Pressure cook for 2 whistles.
- Once the meat is 95% done take it in a colander and let it cool down.
- Now add the masalas to it. Mix well and let it marinate.
- Taste the masala paste and add more salt and spice if needed. Make sure that the masala is tangy, or else add a little more lemon juice. It imparts a good flavour to the meat.
- Remove it in plates and let the masala dry.
- Heat oil in a tawa. Add a small batch of the marinated mutton to it.
- Fry, while stirring in intervals until it gets crispy. This may take 3-4 mins for each batch.
- Street-style veal kabab is ready, Serve it right away with Semiya, onion rings and lemon wedges.
