Idiyappam Recipe | String Hooper Recipe

An authentic and traditional South-Indian noodles made with rice flour. Traditionally, this dish is served with veg stew. But, I personally love them with either masoor dal or Butter Chicken. Rice flour is kneaded to a soft dough, then pressed to form the noodles shape and then steaming it before serving hot. Well... there are many ways of making this delicacy, I'm sharing with you the most common and easy recipe. Though this recipe is made up of simple ingredients, yet the consistency of the dough should be perfect, a sticky dough can make the hoopers sticky while a hard dough may get difficult to press. INGREDIENTS:

  • Rice flour- 2 cups
  • Salt- to taste
  • Hot water- as required
  • Oil- to knead the dough

PROCEDURE:

  • Take a large mixing bowl, seive rice flour and salt in it. This step ensures that the hoopers are smooth.
  • Add a little water to it and mix well using a spatula.
  • Add hot water little by little, till the dough becomes smooth. Make sure that you don't add too much water as it'll make the dough sticky and difficult to shape.
  • Apply some oil to it and knead a little. Let it rest for some time.
  • Grease the idiyappam maker with some oil. You can use either the thin mesh or the thicker one according to your preference.
  • Divide the dough into small even-sized balls.
  • Place a ball inside the idiyappam maker, press and shape in a circular manner in an idiyappam plate. If the dough seems too hard to press, sprinkle some hot water on it and knead it and them press.
  • Heat a wide vessel with some water. Place a stand and a plate on it.
  • Now place the idiyappam plates such that they overlap one another. Steam it for 5-7 mins.
  • The hoopers will turn glossy once done. Remove it and let it cool for 5 mins. Now remove them carefully.
  • Idiyappam is ready, serve hot with Butter chicken or any curry of your choice. Enjoy!
