Bringing to you Cafe-style Double chocolate muffins which are moist, soft and filled with chocolate chunks and topped with chocochips. These are so yum that you can't stop for one. I generally bake using eggless recipes, But this time I thought to try my hands on Muffin recipes using eggs and the results were amazing. The muffins turned out to be soft and moist. So next time, make these yourself rather than buying them from cafes. This recipe yields 16-17 muffins as my liners were big in size, It may go upto 20 for smaller liners. You can double or even halve the recipe according to your requirement. I have made these muffins in the microwave in under 10 mins. Yes! It's that easy. You can alternative;y bake them in an OTG too. INGREDIENTS:
- Eggs- 3 nos
- Curd- 1/2 cup
- Oil- 1 cup
- Sugar- 1 1/4 cups
- Vanilla essence- 1 1/2 tsp
- All purpose flour- 2 1/2 cups
- Cocoa powder- 1/2 cup
- Baking powder- 2 tsp
- Baking soda- 1/2 tsp
- Salt- a pinch
- Chopped chocolate- 1 cup (I have used dark chocolate compound here)
- Chocolate chips
- Cupcake liners- I have used paper ones
PROCEDURE:
- Take 3 eggs in a bowl. Make sure that they are at room temperature.
- Add curd, sugar and vanilla essence to it.
- Whisk until the sugar dissolves. This may take 3-4 mins. This process creates aeration in the muffins.
- Now add oil to it. You can use any flavourless oil in it. I have used sunflower oil here.
- Mix this well until the oil incorporates to form a homogenous mixture. This too may take 3-4 mins.
- Sive together maida, cocoa powder, baking powder, soda and salt. Set it aside.
- Add half of the dry mix to the wet mix. Mix using cut and fold method. Now add the remaining mix and gently fold it to remove all the lumps.
- Finely chop the chocolate. Coat them in 2 tbsp of flour. This process is doen so that the chocolate does'nt sink in the bottom. This step ensure even chocolate throughout the muffin.
- Add the coated chocolate to the batter and gently mix.
- Take a spoon and fill the liners halfway through. Overfilling can cause spillage. Now sprinkle choco chips over it. Place them in individual microwave-safe bowls and microwave a batch of 3 muffins for 2 mins.
- Your quick Double-chocolate muffins are ready. Serve them right away.
- PRO-TIP: microwave your cupcakes for 30 secs before serving for the goey chocolatey feel.
