Aloo Bonda also known as potato bonda is a popular South-Indian evening snack recipe and a great street food option. Aloo bonda literally translates to potato stuffed fritters. Boiled potatoes are spiced and dipped in a gram flour batter and deep fried to golden. This snack is a good option to make when you have sudden guests at home. INGREDIENTS:
For the Aloo stuffing:
- Potatoes- 3-4 nos
- Salt- to taste
- Red chilli flakes- 1 tsp
- Chaat masala- 1 tsp
- Chopped coriander leaves- 2 tbsp
- Chopped onions- 1/2 cup
- Dried mint leaves- 1 tsp
For the Besan batter:
- Ginger garlic paste- 1 tsp
- Salt- to taste
- Red chilli powder- 1 tsp
- Baking soda - a pinch
- Besan/bGram flour- 1/2 cup
- Onion powder- 1 tsp
- Water as needed
PROCEDURE:
- Wash the potatoes well and cook them in a pressure cooker for 20-3 whistles. Peel them once they cool down.
- Mash the potatoes finely, you can keep it chunky it if you prefer.
- Now add all the spices, coriander leaves and chopped onions to it.
- Mix well and check for seasoning and add more seasoning if required.
- Make small balls of the mixture and refrigerate until use.
- Prepare the batter using the ingredients listed above, Make sure to have a thick batter, as runny batter will not coat it evenly.
- Now Heat oil in a kadhai.
- Drop the aloo ball in the batter and cover it completely, Drop it in the hot oil and fry till golden.
- Crispy street-style Aloo bonda is ready. Serve it right away.
