Pav Bhaji Recipe | Mumbai Street-style Pav Bhaji

Pav Bhaji is a wholesome and delicious meal which has 'bhaji'- a spicy and flavourful veggie mash and butter toasted pav or dinner rolls served along with chopped onions and lemon wedges. Originated in Mumbai as a light and quick meal option, this Mumbai's most iconic street food has become hugely popular all over India. Today, I'm showing you my easier homemade version. Except for the preparation, all the other steps may not take much time and efforts. Check out the step-by-step picture instructions below and do try it out. INGREDIENTS:

For cooking the veggies:

  • Potatoes- 2-3 nos (large, peeled and chopped)
  • Green peas- 1/2 cup
  • Carrots- 4-5 nos (medium-sized, peeled and chopped)
  • Beans- 200 gms (chopped)
  • Capsicum- 200 gms (chopped)
  • Onion- 2 nos (chopped)
  • Tomatoes- 2 nos (chopped)
  • Salt- 1 tsp
  • Red chilli powder- 1 tsp

For making the bhaji:

  • Oil- 2 tbsp + Butter- 2 tbsp
  • Jeera- 1 tsp
  • Saunf- 1/2 tsp
  • Bay leaf- 1 no
  • Onion- 2 nos (finely chopped)
  • Tomatoes- 2 nos (finely chopped)
  • Ginger garlic paste- 1 tbsp
  • Salt- to taste
  • Red chilli powder- 1 tsp
  • Pav Bhaji masala- 2 tbsp
  • Sugar- 1 tsp
  • Red food colour- a pinch
  • Chopped coriander leaves- 2 tbsp

For the Pav:

  • Pav
  • Butter

PROCEDURE:

  • Wash and drain the chopped veggies in a colander. Add the veggies to a pressure cooker along with salt and red chilli powder and a cup of water.

  • Pressure cook for 7-8 whistles and make sure that the veggies are cooked evenly.

  • Now using a masher, mash the cooked veggies. Make sure that you don't mash it too fine, we want it to be smooth and well as chunky.

  • Heat butter and oil in a kadhai, add jeera and saunf along with bay leaf to it.

  • Once it splutters, add chopped onions, salt and red chilli powder to it and let it cook till translucent.

  • Now add ginger garlic paste to it and mix well.

  • Add chopped tomatoes to it and let it cook evenly.

  • Now add the mashed veggie mix, also add pav bhaji masala, sugar, food colour and chopped coriander leaves. Allow it to come to a boil. Check for seasoning and add more salt and spice if required.

  • Cut the pav into half and toast in with butter.
  • Serve hot pav bhaji along with chopped onions and lemon wedges. There you go, delicious pav bhaji is ready.
