PROCEDURE:

For the Marination:

  • Take chicken in a large mixing bowl along with all the ingredients for marination.
  • Mix well and let it marinate for at-least 2 hrs.
  • Now take the chicken in a pressure cooker along with a cup water. Close it and pressure cook for 1 whistle.
  • This process will make the masala coat properly to the chicken. You can alternatively skip this step and shallow fry the chicken instead.
  • Set the chicken aside, we'll use it later.

For the gravy:

  • Heat oil in a vessel, add the whole spices and let it splutter.
  • Now add sliced onions to it along with some salt. Let it cook till it gets translucent.
  • Now add ginger garlic paste and red chilli powder and fry for a min, while stirring continuously.
  • Now tomato puree and mix well. You can even replace it with chopped tomatoes if you want a thicker gravy.
  • Allow the tomato gravy to cook well. Meanwhile, let's prepare the hariyali paste.
  • Take mint leaves, coriander leaves, blanched palak and green chillies in a blender jar. Grind it to a fine paste.
  • Add the hariyali gravy to the cooking tomato gravy. Add garam masala at this stage.
  • Now add the chicken pieces to it and let it cook.
  • Check for seasoning and add more salt and spice if needed. Simmer the gravy for 5 mins.
  • Hariyali Chicken gravy is ready. Serve hot along with roti or naan.
