INGREDIENTS:
- Tamarind- 1/2 cup
- Jaggery- 1/2 cup
- Salt- 1/2 tsp
- Jeera powder- 1 tsp
- Red chilli powder- 1/2 tsp
PROCEDURE:
- Wash and soak the tamarind in cup of water.
Once the tamarind is soft, squeeze out the pulp. - Drain it in a colander, add some water to it.
- Take the tamarind pulp in a vessel, add gud to it and mix well.
- Now add red chilli powder, salt and jeera powder to it.
- Allow it to come to a boil. Let it boil till it reduces to half.
- Now check for seasoning and add more jaggery if needed. We need it to be sweet in order to balance out the sourness.
- Let it reduce to half and at this stage, it has thickened.
- Your all-purpose meethi gud imli ki chutney is ready.
