Pumpkin Poriyal Recipe | Kaddu Ki Sabzi| Pumpkin Poriyal

Pumpkin Poriyal is a quick and flavourful poriyal recipe. Can be made in 15 mins and tastes heavenly. Pumpkin is rich in Vitamins and Antioxidants and what's more? It's low calorie content makes it and excellent weight-loss friendly food. This recipe tastes best with rasam rice or even dal-chawal. INGREDIENTS:

  • Oil- 2 tbsp
  • Mustard seeds- 1/4 tsp
  • Curry leaves- 1 sprig
  • Garlic cloves- 4-5 nos (chopped)
  • Onion- 2 nos (medium sized, finely chopped)
  • Tomatoes- 2 nos (medium sized, chopped)
  • Pumpkin- 250 gms
  • Coriander leaves- 2 tbsp
  • Salt- to taste
  • Red chilli powder- 1 tsp
  • Turmeric powder- 1/2 tsp

PROCEDURE:

  • Peel and chop up the pumpkin.

  • Heat oil in a pressure cooker, you can even cook this in a kadhai. But it gets quick with a pressure cooker.
  • Add mustard seeds and curry leaves and let it splutter.

  • Now add chopped garlic to it and fry for 30 secs

  • Now add chopped onions to it. Cook the onions until soft and translucent.

  • Now add chopped tomatoes to it and add salt and spices to it.

  • Wash and drain the pumpkin in a colander. Add the washed pumpkin cubes to the pressure cooker and mix well. Add half a cup of water and mix well.

  • Pressure cook for just one whistle, remove the whistle immediately and remove the contents in a kadhai.

  • Let the extra water in the poriyal reduce. Reduce all the extra gravy till it's dry. Sprinkle coriander leaves over it.
  • Pumpkin Poriyal is ready. Serve hot along with dal chawal or rasam rice.
