An Indian-Style capsicum stir-fry recipe. This is an easy one-pot recipe, which is spicy and flavourful. It can be made in under 15 mins and tastes best with dal-chawal or even roti-dal. I have used onions and potatoes in this recipe along with capsicum for enhanced flavours and textures. Do try this recipe and let me know in the comments how it turned out

INGREDIENTS:
- Oil- 2 tbsp
- Jeera- 1 tsp
- Potatoes- 2 nos (finely sliced)
- Salt- to taste
- Chilli flakes- 1 tsp
- Jeera powder- 1 tsp
- Chaat masala- 1 tsp
- Onion- 1 no (finely chopped)
- Capsicum- 250 gms (finely chopped)
- Tomato- 1 no (finely chopped)
- Coriander leaves- 2 tbsp
PROCEDURE:
- Heat oil in a pan, add jeera to it and allow to splutter.
- Now add the sliced potatoes to it and add some salt to it. Stir and fry it for 2-3 mins until it's cooked through.
- Now add the chopped capsicum, onion and tomato. mix gently and let it cook on high flame while stirring in intervals.
- Now add all the spices and mix well.
- Check for seasoning and add more salt and spice if required.
- The capsicum might have cooked by now, i usually prefer crispy caspicum in my stir fry. If you prefer softer ones, sprinkle some water over it and let it cook on low flame for 5 mins.
- Sprinkle coriander leaves and Desi Capsicum Stir-fry is ready. Serve it right away and enjoy!
