Lemon rice in under 10 mins. Yes, you read it right. Easy, quick and tasty lemon rice recipe made using cooked rice, lemon obviously and some easily available ingredients. This quick easy lunch-box recipe is loved by kids and adults alike. It is both appetizing and healthy. Let me tell you that lemons are a great source of Vitamin C and peanuts are rich in Vitamins too.
INGREDIENTS:
- Oil- 1 tbsp
- Mustard seeds- 1/2 tsp
- Curry leaves- 1 sprig
- Peanuts- 2 tbsp
- Green chillies- 2 nos (roughly chopped)
- Onion- 1/2 cup (finely chopped)
- Tomatoes- 1/4 cup (finely chopped)
- Turmeric powder- 1/2 tsp
- Salt- to taste
- Jeera powder- 1 tsp
- Juice of 1 lemon
- Cooked rice- 2 cups
- Chopped coriander leaves- 1/4 cup
PROCEDURE:
- Heat oil in a kadhai, add mustard seeds and curry leaves and allow them to crackle.
- Now add peanuts to it and fry until it turns light brown.
- Now add green chillies and saute for a few secs before adding in the chopped onions.
- Add salt to the onions nd saute for a min, we won't cook the onions until soft. But we'll let it be crispy, as it tastes best that way.
- Now add tomatoes to it and saute for a min. Add jeera powder and lemon juice to it.
- Now add in cooked rice. I have used leftover rice here. You can even cook fresh rice and cool it completely before using it in this recipe.
- Mix gently and simmer it for 5 mins.
- Garnish with coriander leaves and serve right away.
