Aloo Poriyal... A quick, spicy yet comforting side dish made up of boiled baby potatoes and a few aromatics. This recipe is quick, tasty and can be made in a handful of ingredients. Though peeling the boiled potatoes is a task, but the rest of the preparations are pretty quick. This is my mother's recipe and we all adore this a lot. My kids love this simple aloo poriyal. Tastes best when served with hot rice and rasam. Try ths recipe and make sure to share it's recipe with your friends and family.
INGREDIENTS:
- Baby potatoes- 500 gms (you can even use regular-sized potatoes instead)
- Oil- 1 tbsp
- Mustard seeds- 1/2 tsp
- Curry leaves- 1 sprig
- Hing- 1 tsp
- Salt- to taste
- Red chilli powder- 1 tsp (more or less according to your preference)
- Water- 1/2 cup
PROCEDURE:
- Wash the potatoes well and place them in a pressure cooker with some salt and water. Pressure cook for 3-4 whistles.
- Once done, peel them and chop them into half if the size is big.
- Heat some oil in a kadhai, make sure the oil is evenly hot.
- Now add mustard seeds and allow to splutter, add curry leaves and let it get crispy.
- Now add the boiled potatoes to it and mix gently.
- Now add some salt, hing and red chilli powder. Mix gently.
- Now add 1/2 cup water and mix gently, let the potatoes cook in it. This step ensures that the salt and spice are throughout the potatoes.
- Cook them till all the gravy evaporates, check for seasoning and add salt and spice if required.
- Aloo poriyal is ready. Serve hot along with hot rice and rasam.
