A traditional, healthy and tasty dry stir-fry recipe, Moringa leaves stir-fry. Made using minimal ingredients, it has a comforting taste. Can be paired perfectly with dal-chawal or roti-dal. Moringa leaves/ drumsticks leaves are rich in anti-oxidants, such as Vitamin C and beta carotene. INGREDIENTS:
- Moringa leaves- 2 cups
- Oil- 1 tbsp
- Salt- to taste
- Onions- 1 cup (finely chopped)
- Grated coconut- 1/2 cup
- Water- to cook the leaves
PROCEDURE:
- Wash the moringa leaves well and drain in a colander. Take care that there is no mud left behind in the leaves.
- Heat oil in a kadhai, add onions and some salt. Saute well.
- Saute well until it turns translucent.
- Now add the grated coconut to it, i've used 1/2 cup. You can sue more if you prefer.
- Now add the drained drumsticks leaves to it and mix gently.
- In a minute or two, you'll notice that the leaves have shrunk in size. Sprinkle a little water and cook well.
- After 4-5 mins, check for salt and add more if required.
- Check if the leaves have cooked well. Once cooked reduce any extra water present in it.
- Moringa leaves stir fry is ready. Serve hot with dal-chawal or roti.
