It's the festive season and festivals are incomplete without sweets. I'm sharing with you easy coconut laddoo made using jaggery, so that you can eat those laddoos guilt-free. And let me tell you these laddoos taste better than the ones made with sugar. This easy recipe can be made in under an hour and you can store this in the refrigerator for over a week. Try this Karnataka- special kobari laddoo and let us know how it shined this festive season. This recipe yields 25-28 laddoos, I've used 1/2 tbsp measure for each laddoo. You can alternatively make bigger laddoos. You can also double or triple this recipe on your requirement.


INGREDIENTS:

  • Ghee- 2 tbsp
  • Milk- 1/2 cup
  • Milk powder- 1 cup
  • Jaggery powder- 3/4 cup (you can add more if you prefer sweeter laddoos)
  • Desiccated Coconut- 1/2 cup
  • Cardamom powder- 1/2 tsp
  • Freshly grated coconut- For rolling the laddoos (this step is completely optional, you can alternatively roll your laddoos is desiccated coconut)
  • Ghee- 1 tbsp

PROCEDURE:

  • Heat ghee in a kadhai. Once the ghee gets hot, lower the flame.

  • Now add milk to it and let it come to a boil.

  • Take milk powder and add it to the milk in 2-3 batches. This will prevent from forming lumps

  • After adding one batch mix well to incorporate and later add the next batch. You can cardamom powder at this point.

  • Mix well and keep cooking until the mixture becomes a smooth dough and starts to leave the sides of the kadhai.

  • Now add jaggery powder and desiccated coconut and mix well.

  • Cook this for another 2 mins. Drizzle ghee on the sides and cook this it starts to leave the sides of the pan.

  • Don't over cook it or else the laddoos will turn out dry. Let it cool for 2 mins and while it's still lukewarm start shaping the laddoos.I used 1/2 tbsp measure for even sized laddoos.

  • Now roll the laddoos in freshly grated coconut, you can skip this step or even use desiccated coconut in place of fresh coconut.
  • Kobari laddoos or coconut jaggery laddoos are ready. Serve them right away. You can even microwave it for 10 secs before eating for best results.
