An easy, simple and quick Pulao which is flavoured rice with your choice of vegetables and herbs, made easy using a pressure cooker. This quick recipe can be served as lunch or even dinner, This is also a good option for kid's lunchbox for school as it's nutritous, tasty and can be made in under 30 mins. INGREDIENTS:
Oil- 2 tbsp
Jeera- 1/4 tsp
Onion- 2 nos(finely sliced)
Tomatoes- 3-4 nos(finely chopped)
Ginger garlic paste- 1 tsp
Salt- to taste
Red chilli powder- 1 tsp
Jeera powder- 1 tsp
Sliced carrots- 1/4 cup
Beans- 1/4 cup
Peas- 1/4 cup
You can use any veggies of your choice
Water- 2 cups
Rice- 1 cup
Chopped coriander leaves- 2 tbsp
Chopped mint leaves- 2 tbsp
PROCEDURE:
Heat oil in a pressure cooker, add jeera to it and let it crackle.
Add sliced onions to it and some some salt and saute till translucent.
Add ginger garlic paste and red chilli powder to it and fry it.
Now add chopped, washed and drained veggies to it and fry for a min.
Now add chopped tomatoes and allow to saute well.
Add chopped herbs, water and mix well.
Check for seasoning and add salt and spice if necessary.
Add washed, soaked and drained rice to it and make sure that the rice has no water along with it, cause if there is more water the rice may turn mushy.
Now pressure cook the rice for 3 whistles, release the pressure of the cooker manually using a ladle.
