A spicy , flavourful and nutritious sabzi with potatoes, spring onions, carrot, cabbage is just teh sabzi we all need with Dal chawal. This side-dish can be served with dal-chawal, roti and tastes even better with pulao. A must-try recipe to make your kids have their veggies but in a tasty way. INGREDIENTS:
Oil- 2 tbsp
Jeera- 1/4 tsp
Onion- 2 nos (medium-sized, finely chopped)
Tomatoes- 3-4 nos (medium sized, finely choopped)
Salt- to taste
Ginger-garlic paste- 1 tsp
Red chilli powder- 1 tsp
Jeera powder- 1 tsp
Peas- 1/2 cup
Sliced carrots- 1/2 cup
Diced potatoes- 1 cup
Finely shredded cabbage- 1 cup
Finely chopped spring onion- 1 cup
Chopped coriander leaves- 2 tbsp
Water- 1/2 cup (to cook the veggies)
PROCEDURE:
Heat oil in a pressure cooker, add jeera to it and allow to crackle.
Now add chopped onions to it and some salt and cook till translucent.
Add ginger garlic paste and fry for a min
Now add washed and drained veggies to it.
Add chopped tomatoes and red chilli powder, jeera powder to it.
Mix well and check for salt and spice, add more if necessary.
Now add water to it, mix well.
Pressure cook the veggie sabzi for 2 whistles.
Allow the pressure to release naturally.
Reduce all extra gravy, we want a dry sabzi.
Sprinkle coriander leaves on it and serve hot along with dal-chawal.
