Mix Veg Sabzi | Restaurant Style Mix veggies

A spicy , flavourful and nutritious sabzi with potatoes, spring onions, carrot, cabbage is just teh sabzi we all need with Dal chawal. This side-dish can be served with dal-chawal, roti and tastes even better with pulao. A must-try recipe to make your kids have their veggies but in a tasty way. INGREDIENTS:

  • Oil- 2 tbsp
  • Jeera- 1/4 tsp
  • Onion- 2 nos (medium-sized, finely chopped)
  • Tomatoes- 3-4 nos (medium sized, finely choopped)
  • Salt- to taste
  • Ginger-garlic paste- 1 tsp
  • Red chilli powder- 1 tsp
  • Jeera powder- 1 tsp
  • Peas- 1/2 cup
  • Sliced carrots- 1/2 cup
  • Diced potatoes- 1 cup
  • Finely shredded cabbage- 1 cup
  • Finely chopped spring onion- 1 cup
  • Chopped coriander leaves- 2 tbsp
  • Water- 1/2 cup (to cook the veggies)

PROCEDURE:

  • Heat oil in a pressure cooker, add jeera to it and allow to crackle.
  • Now add chopped onions to it and some salt and cook till translucent.
  • Add ginger garlic paste and fry for a min
  • Now add washed and drained veggies to it.
  • Add chopped tomatoes and red chilli powder, jeera powder to it.
  • Mix well and check for salt and spice, add more if necessary.
  • Now add water to it, mix well.
  • Pressure cook the veggie sabzi for 2 whistles.
  • Allow the pressure to release naturally.
  • Reduce all extra gravy, we want a dry sabzi.
  • Sprinkle coriander leaves on it and serve hot along with dal-chawal.
