Rava Upma also known as Uppittu, is a classic South-Indian breakfast recipe, traditionally made with sooji or rava, along with herbs and some whole spices. INGREDIENTS:
*Sooji/ rava- 1 cup
*Oil- 1/4 cup
*Mustard seeds- 1/4 tsp
*Chana dal- 1 tbsp
*Curry leaves- 1 sprig
*Green chillies- 4-5 nos (roughly chopped)
*Onion- 1 cup (sliced)
*Water- 2 cups + Salt- to taste
*Coriander leaves- 1 tbsp (finely chopped)
PROCEDURE:
*Add water and salt to a saucepan and allow it to come to a boil.
*Meanwhile, heat oil in a kadhai.
*Add mustard seeds to it and allow to splutter.
*Add chana dal to it and fry till it turns golden in colour.
*Now add curry leaves and fry for some seconds.
*Gently add sliced onions to it and saute it well.
*Fry till the onions have turned translucent, make sure that you don't brown it as we don't want brown onions.
*Now add sooji to it and saute it well. Roast teh sooji well till it has absorbed all the oil.
*Now gradually add some water which we kept for boiling.
*Mix well and add more water if required. The sooji will absorb the water quickly, add water required to cook the sooji evenly.
*Simmer the flame and allow the sooji to cook properly.
*Sprinkle coriander leaves on upma.
*Your quick and easy upma is ready, serve hot along with pickle.
