- INGREDIENTS:
- Chicken breasts- 250 gms
- Salt- to taste
- Red chilli powder- 1 tsp
- Tandoori masala- 2 tsp
- Soya sauce- 1 tbsp
- Chaat masala- 1 tsp
- Oil- for shallow frying
Frying the Chicken:
- For the Filling:
- Potato- 1 cup (Boiled, peeled and mashed finely)
- Chopped Mint leaves- 1/2 cup
- Chopped coriander leaves- 1/2 cup
- Red chilli powder- 1 tsp
- Juice of 2 lemons
- Salt- to taste
- Chaat masala- 1 tsp
- Black pepper powder- 1 tsp
- Crushed kasuri methi- 1 tsp

For the Paratha dough:
- Whole wheat flour- 2 cups
- Salt- to taste
- Red chilli powder- 1 tsp
- Coriander powder- 1 tsp
- Chopped coriander leaves- 1 tbsp
- Chopped mint leaves- 1 tbsp
- Crushed kasuri methi- 1 tsp
- Curd- 1/2 cup
- Water- to knead the dough
- Oil- for kneading the dough
- Oil- to cook the parathas
- PROCEDURE:
- Firstly, we'll prepare the chicken.
- In a large mixing bowl, add all the ingredients listed under the marinade except chicken and apply it to the chicken breasts.
- Marinate the chicken for at-least an hour.
- Heat a tawa, drizzle some oil and place the chicken pieces one by one.
- Shallow fry the chicken until crispy and cooked evenly.
- Remove it in a plate and fry the remaining pieces similarly.
- Shred the chicken pieces and set them aside.
- Now let's prepare the filling.
- In a large mixing bowl, add all the ingredients listed under the filling section.
- Add shredded chicken to it and mix well.
- Check for seasoning and add more salt and spice if necessary.
- Set the filling aside.
- Now let's make the paratha dough.
- Take a large mixing bowl, add wheat flour to it and all the dry spices. Mix well.
- Now add the chopped greens, crushed kasuri methi and curd. Mix well and now add water required to make a smooth yet tight dough.
- Apply oil on the dough and knead for a min.
- Cover the dough and let it rest for 5 mins.
- Now take a small portion of a dough, flatten it out a bit.
- Now place a heaped tbsp of the filling and now bring thhe sides of the dough and seal it like a momo. Pinch out the excess dough.
- Dust some flour on it and roll out evenly.
- Place it on a hot tawa, apply some oil or ghee and cook it till crispy and flaky.
- Hot, crispy and yummy Chicken Paratha is ready.
Serve hot parathas with sliced onions and lemon wedges along with ketchup and Cucumber Dip.
