Cauliflower Palya / Cauliflower Sabzi

 Quick, dry, healthy and tasty cauliflower palya recipe. We generally come across caulifower recipes like Gobi manchurian, gobi pepper fry, etc. these taste amazing, but since they are deep-fried they get very unhealthy, and hence it reduces the health benefits of cauliflower. That's why we bring to you simple cauliflower palya, which is comforting and tastes best with chawal dal. try this amazing recipe and let us know how it turned out.


INGREDIENTS:

*Caulifower florets- 500 gms

*Onion- 1 (large, finely chopped)

*Tomato- 1 (large, finely chopped)

*Oil- 2 tbsp

*Mustard seeds- 1/4 tsp

*Curry leaves- 1 sprig

*Green chillies- 4 nos (roughly chopped)

*Turmeric powder- 1 tsp

*Coriander leaves- 1 tbsp (finely chopped)

*Salt- to taste

For the Masala powder:

*Jeera- 1 tsp

*Fennel seeds- 1 tsp

*Cloves- 2 nos

*Dry red chillies- 4-5 nos

*Cinnamon- 1 2'' stick



PROCEDURE:

Boiling the Gobi:

*Clean the gobi well, and soak it in salty water for 5 mins.

*Drain the gobi in a colander.

*Add around 2 cups of water in a vessel, allow it to come to a boil.

*When the water starts to boil, add turmeric and gobi.

*Mix well and allow it to cook well.

*When the gobi is cooked completely, drain it in a colander and set it aside.


Preparing Masala powder:

*Dry roast all the mentioned whole spices until fragrant.

*Switch off the flame and allow it to cool down.

*Add the spices to a blender jar and make it a fine powder. 

*Set this aside.


Sauteing the gobi:

*Heat oil in a vessel, add mustard seeds to it and allow to crackle.

*Add curry leaves and green chillies, fry for a min.

*Add chopped onions and some salt, allow to cook till translucent.

*Now add chopped tomatoes and mix well and cook till mushy.

*Now add the boiled gobi and mix well.

*Add the masala powder, chopped coriander and give it a good stir. 

*Simmer the flame for 5 mins. 

*Cauliflower palya is ready, Serve hot along with dal chawal.
