Curd rice is a popular and tasty south Indian dish that is served with a south Indian thali. Curd rice is nothing but curd mixed with cooked rice, herbs and then tempered. This dish is good for summers and light on the stomach as well.
INGREDIENTS:
*2 cups cooked rice
*1/2 cup milk
*1 ½ cup curd
*1 tsp coriander leaves- finely chopped
*1 tsp green chilly- finely chopped
*2 tsp cucumber- finely chopped
*salt – to taste
FOR TEMPERING:
*oil/ ghee
*1 tsp curry leaves
*1/2 tsp mustard seeds
*2 whole dry red chillies
PROCEDURE:
*Take cooked rice in a mixing bowl and mash it slightly with a ladle. The grains should blend with one another.
*Now add curd rice and milk and mix well. Milk is completely optional and milk is added so that by the time you serve curd rice it should not taste sour.
*Add salt, green chillies, coriander leaves and mix well.
*Place a small pan on the stove for tempering.
*Heat oil/ ghee.
*Add mustard seeds, curry leaves and dry red chillies. Immediately pour this onto curd rice and mix well.
*Add cucumber just before serving.
